Prepare Strawberries
- In a mixing bowl, combine sliced strawberries and granulated sugar. Toss gently and let sit for 15 minutes to macerate.
Make Shortcake
- Preheat the oven to 425°F (220°C).
- In a large bowl, whisk together flour, baking powder, sugar, and salt.
- Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Stir in the milk until just combined.
- Turn the dough onto a floured surface and knead gently a few times. Pat into a 1-inch thick rectangle.
- Cut into rounds using a biscuit cutter and place on a baking sheet.
- Bake for 12-15 minutes or until golden brown.
Make Whipped Cream
- In a mixing bowl, beat heavy cream, powdered sugar, and vanilla extract until soft peaks form.
Assemble Shortcake
- Split the shortcakes in half. Layer the bottom half with macerated strawberries and a dollop of whipped cream.
- Top with the other half of the shortcake and add more strawberries and whipped cream on top.
