  • 2 medium sweet potatoes peeled and diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup bell pepper chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil for cooking

Cooking Steps
  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and bell pepper, sauté for 5 minutes until softened.
  3. Stir in minced garlic and cook for an additional minute.
  4. Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 7-10 minutes.
  5. Season the beef mixture with cumin, paprika, salt, and black pepper.
  6. Add diced sweet potatoes to the skillet, stirring well to combine.
  7. Cover the skillet and reduce heat to low. Cook for 15-20 minutes, stirring occasionally, until sweet potatoes are tender.
  8. Remove from heat and let sit for a few minutes before serving.
