Marinate the Chicken
- In a mixing bowl, combine green onions, thyme, allspice, nutmeg, cinnamon, black pepper, salt, brown sugar, soy sauce, vegetable oil, lime juice, garlic, ginger, and scotch bonnet peppers. Mix well to form a marinade.
- Add the chicken pieces to the marinade, ensuring they are well coated. Cover with plastic wrap and refrigerate for at least 2 hours, preferably overnight.
Grill the Chicken
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and let excess marinade drip off. Discard the remaining marinade.
- Place the chicken on the grill and cook for about 30-40 minutes, turning occasionally, until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.
- Remove from the grill and let rest for 5 minutes before serving.
Notes
Serve with rice and peas or a fresh salad for a complete meal.
