Method
Prepare the Marinade
- In a mixing bowl, combine green onions, thyme, allspice, cayenne pepper, nutmeg, cinnamon, brown sugar, orange juice, soy sauce, vegetable oil, garlic, ginger, and salt. Mix well.
Marinate the Chicken
- Place the chicken pieces in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.
Grill the Chicken
- Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the marinade.
- Place the chicken on the grill and cook for about 30-35 minutes, turning occasionally, until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.
Serve
- Remove the chicken from the grill and let it rest for 5 minutes before serving. Enjoy with rice and peas or a fresh salad.
Notes
For extra heat, add more cayenne pepper or serve with a spicy sauce on the side.
