Ingredients
  

Rice and Shrimp
  • 2 cups cooked jasmine rice preferably day-old
  • 1 pound shrimp peeled and deveined
Vegetables
  • 1 cup peas frozen or fresh
  • 1 cup carrots diced
  • 1 cup green onions sliced
Sauce
  • 3 tablespoons soy sauce low sodium preferred
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 2 cloves garlic minced
  • 1 teaspoon ginger minced
Eggs
  • 2 large eggs beaten

Method
 

Preparation
  1. Prepare all ingredients: chop vegetables, beat eggs, and ensure shrimp are cleaned.
Cooking
  1. Heat vegetable oil in a wok over medium-high heat.
  2. Add garlic and ginger, stir-frying for about 30 seconds until fragrant.
  3. Add shrimp and cook until pink, about 3-4 minutes. Remove shrimp and set aside.
  4. In the same wok, add peas, carrots, and green onions. Stir-fry for 2-3 minutes.
  5. Push vegetables to the side, add beaten eggs, and scramble until fully cooked.
  6. Add cooked rice and shrimp back to the wok. Pour soy sauce and sesame oil over the mixture.
  7. Stir everything together and cook for an additional 2-3 minutes until heated through.
  8. Serve hot, garnished with extra green onions if desired.

Notes

For best results, use day-old rice as it is drier and prevents clumping.
