  • 2 tablespoons sesame oil
  • 1 tablespoon vegetable oil

  • 2 large eggs beaten
Seasoning
  • 1 teaspoon garlic minced
  • 1 teaspoon ginger minced
  • 1 teaspoon black pepper

Method

Prepare the Ingredients
  1. Gather all ingredients and prepare them as described.
Cook the Shrimp
  1. Heat vegetable oil in a wok over medium-high heat. Add the shrimp and cook until pink and opaque, about 3-4 minutes. Remove and set aside.
Scramble the Eggs
  1. In the same wok, add beaten eggs and scramble until fully cooked. Remove and set aside with the shrimp.
Stir-Fry the Vegetables
  1. Add sesame oil to the wok. Stir-fry garlic and ginger for 30 seconds, then add carrots and peas. Cook for 3-4 minutes until tender.
Combine Rice and Ingredients
  1. Add the cooked rice to the wok, mixing well with the vegetables. Stir in the soy sauce, black pepper, shrimp, and scrambled eggs. Cook for an additional 2-3 minutes, stirring frequently.
Finish and Serve
  1. Stir in the green onions and cook for another minute. Serve hot.

Notes

For best results, use day-old rice as it is drier and prevents clumping.
