Ingredients
  

Chicken
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
Peanut Sauce
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce low sodium preferred
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 clove garlic minced
  • 1 inch fresh ginger grated
  • 1/4 cup water to thin the sauce
Vegetables
  • 1 cup bell pepper sliced
  • 1 cup broccoli florets
  • 1 cup carrots sliced
  • 2 tbsp green onions chopped, for garnish
Rice
  • 2 cups cooked jasmine rice for serving

Method
 

Prepare the Chicken
  1. Heat a large skillet over medium heat and add a splash of oil. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
Make the Peanut Sauce
  1. In a bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, and water until smooth.
Combine Chicken and Sauce
  1. Pour the peanut sauce over the cooked chicken in the skillet. Stir to coat the chicken evenly and cook for an additional 2-3 minutes until heated through.
Add Vegetables
  1. Add the sliced bell pepper, broccoli florets, and carrots to the skillet. Stir-fry for about 5 minutes until the vegetables are tender but still crisp.
Serve
  1. Serve the Thai peanut chicken over cooked jasmine rice and garnish with chopped green onions.

Notes

For a spicier version, add some red pepper flakes or sriracha to the peanut sauce.
